Description

Silver pomfrets are usually silver/white in color, with few small scales. They can grow up to a range of 4–6 kg (8–13 lb). However, due to overfishing, specimens weighing less than 1 kg (2 lb) are more commonly seen. Pomfrets are the most popular edible fish in India and fetch the highest price in markets, their popularity stemming from the clean white appearance of the body, firmness of flesh and flavor. They are inshore species, usually found in schools over muddy bottoms.

“Pomfret” is one of the most sought after fish in India and Southeast Asia due to it’s delicate white flesh with subtle “non-fishy” flavor. The flesh breaks up easily on the plate but not along distinct flake lines. It holds together well enough to poach fillets (skin off) but that isn’t a usual way to prepare this fish. Fillets are too thin and tender for soup.

Pomfret fishes are high in fat content, provides calcium, vitamins A and D, and BÂvitamins, including Vitamin B12. Increased Vitamin B12 makes it important for the nervous system. It also contains good amount of iodine, critical for the thyroid gland. Thus Pomfret is good for eyesight and healthy hair and skin.
